Cream Cheese Chicken Enchiladas {Delightful Morsel}

Here's a yummy, easy, quick chicken enchilada recipe.

Prep Time: 20 Minutes (30 if you cook the chicken yourself)
Total Time: 40-50 Minutes

  • 2 Cups chopped cooked chicken
  • 1 chopped bell pepper
  • 1 8 oz package of cream cheese, cubed
  • 1 jar of salsa
  • 8 (6-inch) flour tortillas
  • 12 oz mexican cheese cut up or shredded
  • 1/4 cup milk
1. Stir chicken, bell pepper, cream cheese, and   1/2 cup salsa in saucepan on low heat until cream cheese is melted.

2. Spoon about 1/3 cup of the mixture down the center of each tortilla and roll them up. Place, seam down, in baking dish (9x13)

3. Stir Mexican cheese and milk in saucepan over low heat until smooth. Pour sauce over tortillas and cover with foil.

4. Bake at 350 degrees for 20 minutes. Pour remaining salsa over tortillas (if you want-I usually let people dip individually).
